Finally our whisky is online and ready to ship to wherever you are!
The Process:
We source organic barley from Christchurch and mill it ourselves. Once fermented the wash is distilled and barrelled in aged and new French Oak. The new French oak barrels range in 10litre to 50 litre sizes. All our whisky is aged a minimum of two full years before it is released.
Tasting Notes might include, depending on the barrel: Tobacco, Dark fruits, Caramel, Vanilla, Smoke (manuka), Honey, local Botanicals…
Stuart’s latest whisky is named ‘Echoes’. The name comes from his book titled ‘Echoes from the Land’. They will be released at the same time so keep an eye on our facebook and here for that date.
